Cooking With Kerrie: Ramen Dump & Done Salad

I’m in the kitchen with my BFF Kerrie making her famous Dump & Done Ramen Salad, adapted from Chrissy Teigen’s Cravings cookbook.

Dump & Done Ramen Salad

3 (3-ounce) packages of chicken-flavored ramen
1 (12-ounce) package of broccoli slaw (or better yet, if you have Trader Joe’s nearby, get their Cruciferous Crunch salad mix!)
2-3 shallots, thinly sliced
1 cup frozen peas
¾ cup corn kernels (from a can is just fine!)
½ cup sugar
⅓ cup vegetable oil
1 tbsp sesame oil
½ cup apple cider vinegar
1 cup roasted, salted sunflower seeds

Separate and set aside the seasoning packets from the ramen noodles.

In a large bowl, crush the ramen noodles into small, bite-sized pieces. Make sure you don’t have any big chunks. Add the broccoli slaw, sliced shallots, frozen peas and drained corn, then toss it all together.

In another microwave-safe bowl, combine the sugar, vegetable oil, apple cider vinegar, sesame oil and the seasoning packets that came with the ramen packets. Mix well and microwave on high for 1 minute.

Pour the hot dressing over the slaw/noodle mixture and toss. Cover with Saran Wrap (or put into a big Tupperware bowl with lid). Refrigerate overnight. I like to shake mine up a few times to remix everything.

Add the sunflower seeds just before serving.
